Setting and Potting Preserves
To test the setting point of jam:Flake TestDip a wooden spoon into the jam, remove and hold over the jam, twisting it a couple of times to cool the sticking jam. Chill a saucer in the fridge for a minute. Using a thermometer, the temperature should be 105°C (220°F). Potting Jams and PreservesThoroughly wash the jars, rinse and drain on a clean towel.
Once filled do not move or tilt the jars until the contents are set. Sealing the jars:
Most preserves will keep for between six and twelve months, unless otherwise stated.
